About Bosco del Merlo
Bosco del Merlo, owned by the Paladin family (Castelvecchi in Chianti). has managed to produce some incredible wines out of Tuscany with Castelvecchi... Chiantis and unmatched Franciacorta out of Lombardia. The Bosco del Merlo brand covers wines from Friuli and of course Veneto where today’s bubbles are from. The Paladin family spares no expense on their vineyards, from high tech geological surveys, to year round infrared vineyard temperature monitoring, they put all their heart and soul into their wines across the board.About Castello Bonomi
The Paladin family, who has been making estate-bottled wine for about 60 years, owns several estates across Italy, from the Veneto to Tuscany, but... perhaps their most famous and most distinct is Castello Bonomi, in Lombardy’s Franciacorta region. With vinicultural history that dates back to medieval Benedictine monks, Franciacorta spans about 5,400 acres, but this rare northern Italian region is devoted to one unique style of wine: the best champagne-styled sparklers that you can find outside of France — indeed, it’s the sole DOCG region that permits classic méthode champenoise sparklers. The family-owned-and-operated Castello Bonomi estate is housed in a gorgeous art deco villa built in the late nineteenth century, and the estate’s vineyards sit on 60 steeply pitched acres in a natural amphitheater that rests at the foot of Mount Orfano. These terraced vineyards enjoy a privileged microclimate that includes limestone-rich soils, southern exposures, excellent drainage, and pure sunlight. Spread across almost 250 acres in Mareuil-sur-Aÿ, Billecart-Salmon, founded in 1818, remains family owned and operated. This estate supplements its own... grapes with those grown by farmers across 700 more acres situated around Epernay, and Billecart-Salmon crafts seven elegant, finessed bottlings, including some of the best-priced vintage Champagne on the market. Billecart-Salmon harvests its grapes early to ensure an elegant, acidic, and structured Champagne, suitable for aging, and it uses a process known as double cold settling, by which it rests the first press in cold tanks before racking it again to let it settle and precipitate again, thus naturally removing unwanted solids, and wild yeasts. This Champagne estate even uses horses and sheep to help tend to its Clos Saint-Hilaire vineyard! Aging takes place in Billecart-Salmon’s chalk caves, which extend more than a mile underground and date to the seventeenth and nineteenth centuries.
