Marchesi Antinori Castello della Sala ‘Cervaro della Sala’ Umbria IGT 2021
The sunny, crisp, and complex child of a cool spring and a gorgeous summer, the 2021 Cervaro is a knockout. Antinori has reduced the Grechetto component in recent years, and that choice shows in the Chardonnay-driven profile of this wine. Crunchy green apples and succulent stone fruits rest on a generous framework of oyster shells and flint, scattered with lime blossoms, fresh earth, and a kiss of hazelnut. This wine feels at once rich and fresh, slowly building to a lingering crescendo accented by saline minerals and tinged with citrus. Gorgeous now, gorgeous in fifteen years, just gorgeous, period.
