Domaine Jean-Marc Pillot

Fourth-generation vigneron Jean-Marc Pillot is something of a rockstar in Chassagne. After studying at the Lycée Viticole in Beaune, Jean-Marc began... working with his father, Jean Pillot, in 1985 and he assumed control of the estate six years later. Jean-Marc has strived to leave his own personal imprint on his domaine’s wines while remaining true to the history of his father’s estate. Over the past few decades, Jean-Marc has taken his vines organic, built a new wine cave, tinkered with vinification and elevage, and moved to fermenting with only indigenous yeasts. He has also expanded the estate to about 30 acres of land, with grapes coming from an additional five or so acres coming from trusted négociants. While Jean-Marc Pillot’s holdings are mainly in Chassagne, the domaine also has vineyards Puligny, Santenay, Meursault, and Remigny, and though the estate primarily crafts white wines, it is well known for some spectacular reds. Recently, Jean-Marc’s son Antonin has begun assuming control of his father’s estate, ensuring the Pillot family’s legacy of pure, traditional, expressive white Burgundies.

About Domaine Bitouzet-Prieur

Family-owned-and-operated, Domaine Bitouzet-Prieur has long roots in Burgundy, but aside from a new winery finished in 2020, very little about... this Volnay estate has changed. Founded in 1804 by the great-great-grandfather of the current owner-winemaker, Vincent Bitouzet, this 29-acre estate is dedicated to crafting long-aging, classically styled Burgundies, and it has earned a sterling reputation for making outstanding, profound wines. Vincent works alongside his wife, Annie, and son, Francois; they use non-interventionist practices both in the vineyards and in the cellar, farming organically, foregoing pesticides and herbicides, and they rely on natural yeasts and employ very little new oak. Vincent’s wines are complex, elegant, age-worthy, and exceedingly pure — the house style for both its red and white Burgundy would be entirely recognizable to his forebears, and this mindful adherence to traditional Burgundy is what makes connoisseurs and collectors seek out Bitouzet-Prieur wines.

Olivier Leflaive

Olivier Leflaive

(sometimes also called Olivier Leflaive Frères or Maison Olivier Leflaive or Domaine Olivier Leflaive) An eighteenth-generation vigneron and a member of the... Leflaive family, Olivier almost has Puligny-Montrachet in his blood. Domaine Leflaive, one of Burgundy’s most august houses, was founded in 1717, and Olivier worked at his family’s estate while quietly striking out on his own, buying some plots in the Côte d’Or and forging relationships with grape growers. About a decade after Maison Olivier Leflaive opened its doors in 1984(Domaine Olivier Leflaive would follow), Olivier left Domaine Leflaive, eventually joined by his brother Patrick, his daughter Julie, and other family members. Over time, Olivier expanded his holdings to 64 acres of estate-owned vineyards, mostly in Puligny-Montrachet, Chassagne-Montrachet, Meursault, and Pommard; Olivier also leases plots or buys grapes grown on an additional 182 acres of vines. Alongside his chief winemaker, Franck Grux, Olivier and his team crafts wines from 82 climats, including the iconic grand crus of Bâtard-Montrachet, Chevalier-Montrachet, and Montrachet. Olivier Leflaive takes a plot-focused approach to its winemaking, showcasing the terroir and placing an emphasis on purity — and this approach has paid off in wines of tremendous elegance, structure, and nuance.
